Sunday Dinner: Polenta

What's another great way to use my homemade stock? Making polenta! I
love polenta; its creaminess and rich flavor make me feel very cozy -
like wearing a nice winter coat, just what I needed when it's only 30
degrees outside!
 
I substituted Pecorino cheese for the usual Parmesan and added more
shredded chicken meat to enhance the texture and flavor. Homemade rustic
Italian food - I can have it whenever and wherever.

Sunday Dinner: Arugula Salad with Shaved Fennel and Fontina Cheese

It's been a while since I made my last cold salad. I bought a box of
arugula a while ago for making panini, but I still had a lot of it
left. I also dug out a half bulb of fennel from last Friday when I
made carbonara in the office. I concocted a simple salad with the
above vegetables with grapefruit, dried cranberry, and shaved Fontina
cheese.
 
The dressing is basic vinaigrette - 3 parts of olive oil plus 1 part
of white wine vinegar. Feel free to add a few drops of flavored oil
too. I added 1/2 teaspoon of walnut oil.
 
The salad served as an appetizer.

Sunday Lunch: Chicken Noodle Soup

I spent 6 hours making poultry stock yesterday (I used the carcass of
a pheasant and chicken wings...thus, poultry stock). Homemade stock is
absolutely brilliant. I cannot describe how much more flavorful and
rich is homemade stock than store bought; any home cook just has to
try it! I ended up having about 3 to 4 quarts (1 quart = 4 cups) of
it.
 
I made chicken noodle soup with my stock for lunch. I re-boiled the
stock and added shredded chicken meat, braised cabbage, and egg
noodles; it was definitely the quickest homemade meal I have ever made
- total 10 minutes!

Malaysian Curry

I made Malaysian curry for dinner last night, with chicken thighs, bok choy head, and onions.
I can usually get 3 meals out of a pot of curry, which is one of the main reasons why I
make it often. Making curry also helps me get rid of older vegetables
that are on the brink of going slimy.
 
What do you do to get rid of older ingredients in your refrigerator?

Other Than Hot Chocolate and Coffee...

I love lemonade! But why does it have to be a summer drink? I dropped
two green tea bags, 1 cinnamon stick, two slices of fresh ginger, and
added 3 tablespoons honey, 1 1/2 tablespoon raw sugar, 3 cups of
water, and lemon juice from 3 lemons into a sauce pan, and heated
everything until boil and stirred for 1 minute before serving. This
powerful winter lemonade has a lot of vitamin C to prevent cold. Give
it a try!

Bringing Crate and Barrel into My Kitchen

I have finally bought few nice soup bowls to help me take better food
pictures. I have waited for a while to shop for new bowls because I
knew the discount would be higher after holiday season. I went to
Crate and Barrel with my friend yesterday and bought a nice oval soup
bowl for only 1.99! I took a picture of it with my creamy potato soup,
and I am very satisfied with the new pictures.

Making Things Happen in 2009

To continue my effort of eating and cooking with whole foods, I am
planning on growing my own vegetables and fruits. My backyard has been
neglected (besides mowing it occasionally) for many years since none
of our family members has had time to take care of it. Part of my has
always been hurtful whenever I look outside my window and see weeds
and dead leaves sprawling everywhere. I finally went to Home Depot the
other day and bought some tools to clear my barren land.
 
I cleared one of the corners of my backyard this morning. I cut down
the branches and bundled them up with vines crawled around my fence.
Here's a good start to a new life - down to earth.

2. In the middle of cutting everything down
3. Cleared out some space (hope the picture is not too blurry to tell
the difference), and I might set up a horseshoes game at the corner
4. A bundle of dried branches...pretty sure they will come in handy
when I need to start fire or set up an animal trap

Barrel Luncheon: Happy New Year

To celebrate another successful and eventful year in Barrel office, I
made a holiday lunch for 4 hungry men (including me).
 
The Menu:
Side dish: Chinese steam buns with braised tripe, braised apple
cabbage with herb butter
Main dish: Louisiana kidney beans and kielbasa
Dessert: Crookneck squash cake with caramel mascarpone whipped cream
