Stove Top Mac-n-Cheese

I didn't have the patience to bake a casserole tonight, so I settled
for the stove top mac-n-cheese (vegetable mac-n-cheese take-2). I
combined 3 smoked Vermont cheddar cheese in this dish; it turned out a
little salty but very flavorful with crushed black pepper and roasted
zucchini and yellow squash. I dig the smoky flavor in mac-n-cheese.

Right off the plane

I kid you not...sitting makes you tired. I was exhausted from sitting
in an airplane for 5 hours coming back from Dallas. I had to exercise
after I came home in order to get my body in sync.

At Dallas...

On the way to work. I chose to walk (approximately 1 mile) across the
highway to the office. I am glad to see that adults are taking the
initiatives to get kids active (kids playing soccer in the photo).
Dallas is one of the fattest cities in the US. I hope to see that
changed in the future.

Pluck that Eyesore

The crab grass grown between the concrete on my driveway has been an
eyesore. I cleaned some of it last time, and got rid of the remaining

The Perfect Morning

After finding out that my jury duty has been canceled, I went for an
8-mile run and came home to eat an enormous breakfast (breakfast #2).
What a beautiful morning and a great way to start the weekend off!

No Knead Bread

Since baking a loaf of bread is a long process, I have been using the
No Knead Bread method provided by NY Times' Mark Bittman, the
Minimalist. This is the third time I have attempted baking a No Knead
Bread. The interior still does not get enough "lift" to create bigger
holes (my oven does not get hot enough). Still, the bread is soft and
chewy inside and crusty on the outside...just the way I like it.

Working From My Kitchen

I have moved my operation into the kitchen. My kitchen provides me a
great view to my backyard; I find myself most peaceful when I can be
around the nature and smell the leftover aroma from cooking.
